November 16, 2021, Charlotte, NC – Aladdin Campus Dining, part of the Elior North America family of companies, is proud to announce that a higher education chef was crowned the winner of Elior’s Waste Nothing Rescue Recipe Throwdown competition. Chef Hector Ruiz, who is a member of Aladdin’s culinary team at Alvernia University in Reading, Pa., competed in the friendly challenge against 500 chefs across Elior North America.
The winning dish was a root vegetable tart created by Chef Ruiz, whose inspiration came from an effort to utilize unused and extra product. Chef was innovative in creating a colorful and tasteful menu item that’s easy to make and has great acceptability.
Aladdin adopted Elior North America’s “Waste Nothing” approach to help their culinary teams become aware of the food waste they produce and work to reduce, rescue, and redirect it from the landfill.
“Food waste is a global challenge, and as an organization that is all about food, we believe it is our responsibility to work towards positive change,” says Aladdin director of marketing, Trent Krupica.
The Rescue Recipe Throwdown competition not only inspires chefs to cut waste, it also promotes creativity, transforming perfectly good ingredients into new and delicious recipes that are incorporated into Aladdin’s menus.
