Fairmont State opens Mexican-style restaurant on first day of classes

FAIRMONT – A new smell wafted through the air and greeted students on the first day of classes Monday.

Instead of seeing the Nickel as Fairmont State University students walked into the Falcon Center Monday, they saw a new restaurant in its place, Chilaca, which is the vision of one of the university’s culinary partners.

“Chilaca is a Mexican-based food that is served fast,” Guy Kellner, senior vice president of culinary development for Elior, parent company of Fairmont State’s food services contractor Aladdin, said. “The whole idea of moving people fast through the line is important”.
