University of Dubuque Sustainable Campus Garden Experience

Thanks to Aladdin, The University of Dubuque in Iowa gets a taste of produce from the university-run garden!  A “Sustainable Salsa Celebration” recently inspired UD students to create their own salsas with Executive Chef Andy Mettert, who assisted as seen pictured here in the Telegraph Herald, a Dubuque daily newspaper!
 
The UD garden was constructed in April of 2022, and began harvesting food in August, just before students returned to campus!
 
The Aladdin team is now cooking with the fresh produce harvested from the garden which so far has included 730 lbs. of ripe tomatoes, and nearly 58 lbs. of green tomatoes, along with 229 lbs. of yellow onions and 64 lbs. of peppers!
